ENCHILADA SAUCE

They say Mexican food is the closest to Indian food you can ever find. Enchilada is a Mexican dish that originated in Mexico but is also popular in Spain and other parts of the world. It is a dish in which a corn tortilla/ flour tortilla is rolled with vegetable/meat stuffing and is baked with a spicy sauce that is exclusively made for enchiladas. 

Usually the sauce is readily available in the supermarket but I always prefer to make it fresh at home sans preservatives. It's really easy and consumes less than 10 minutes to prepare this sauce. The aroma of the sauce can leave your tummy rumbling. Also you can preserve the sauce in the refrigerator or freeze them if you make them in bulk. But Trust me making it each time is a lot easier and like I said less time consuming.. plus you've FRESH sauce for your enchiladas :)

It's been a while since I posted a recipe of a drink, so I thought it's high time I post something. Well, it's burning hot and humid in FL and is horribly sultry as it can get! Summer's here in all it's glory at part of the world as everyone knows it. So long and sunny days are ever so more a part of our routine. Well, technically I must be posting more 'summer-thirst quenching' drinks but I haven't, cuz I can't resist myself from not drinking the juice that I make.. I try hard not to sip it up but , the thirst is so bad that I procrastinate the post saying 'next time' :P 

Anyway, sunny mornings can be a bane to have breakfast and the fussy me who hates breaking my fast found this to be my last resort! These days even Aru hates eating the same old cereals, granola bars and bagels.. n he insisted that I try making a power packed drink for breakfast as it not only keeps him COOL :P but also satiates his hunger. Plus the benefits of dates are aplenty and makes for a filling breakfast. 

I'd like to mention some  of the health benefits of dates just so you know how robust it can make us :) 

Dates are known to be excellent source of Iron, potassium and calcium. 
They are an excellent source of fiber hence cures chronic constipation and indigestion. 
They are also a great detoxifying source.
Dates help regulate the menstrual cycle.

RAS MALAI | FROM THE SCRATCH

It was almost going to die.. yes.. but i killed it! :) wondering what?? well.. the can of milk in my refrigerator was 3 days away from getting curdled, but then I was apprehensive about using it as it had curdled a couple of times when i tried boiling n using it earlier. So I also had lemons in abundance in case it didn't curdle completely. Initially I had planned to make paneer out of it, but then since I almost had a gallon of milk I thought I should save some for making Ras Malai, which I had been planning to make since ages.

My friend also helped me with curdling the milk as it was my first time. To my surprise I was totally impressed with the outcome :) They were incredibly soft, sweet and tasted better than K C Das's :P (not boasting!!!) but yeah, they tasted great.

Usually, rasgullas are used to make ras malai's to save time, but I decided to give it a try and made it from the scratch. You'd definitely don't wanna miss a chance to try it.

My sincere apologies for being forgetful to click pics of the milk curdling and how I made paneer out of it. I was all too excited about the process. So hope you can follow the one step I missed by referring to the modern Saraswathi 'GOOGLE' :)

ALOO PALAK DRY

Posting after nearly two weeks! Phew! Was trotting NYC and DC :) everyone in US is trotting at this time of the year since it's the first long weekend of the year during the last week of May. My legs were swollen, walking tirelessly in the bylanes of New York! An incredible and indelible experience! 

Alright, getting back to the post, Aloo palak is done in two different ways, one, the watery and gravy kinds and the other which is 'high'and dry :P I love the latter, so does Aru. It tastes great with roti and chapathi :) 
Usually, palak is also substituted with methi leaves sometimes, but you can try both. The procedure remains the same. This recipe requires no grinding blending and can be a great option for lunch box.
